Amsterdam, Bitterball, Croquettes

AMSTERDAM: These delicious croquettes were known as bitterballs (“bitterballen”), and were potato balls mixed with pieces of beef.  They were dipped into a small little plate of Dijon mustard.  The bitter in “bitterballen” doesn’t refer to the flavour of the croquettes, but rather to the alcoholic beverages that the bitterballs are usually served with.
